Question: What are some fun recipes I can make at home using ordinary household items?
My friend and I are bored and we love to cook! But we don’t have a lot of ingredients that some of the fancy recipes call for and we already did the basics like pancakes, cookies, smoothies and pasta. So we are looking to make some more fancy things with stuff we have because we can’t get to the store this week. Please leave some recipes! Thanks!!!
Ordinary as in salt, pepper, baking powder+soda, olive oil, butter, sugar, flour, lots of spices and brown sugar. Stuff like that.

TUNA BURGERS….this recipe is very forgiving…even when you don’t have or don’t like some of the ingredients

Ingredients

* 1 (6 ounce) can tuna, drained
* 1 egg
* 1/2 cup Italian seasoned bread crumbs
* 1/3 cup minced onion
* 1/4 cup minced celery
* 1/4 cup minced red bell pepper
* 1/4 cup mayonnaise
* 2 tablespoons chili sauce
* 1/2 teaspoon dried dill weed
* 1/4 teaspoon salt
* 1/8 teaspoon ground black pepper
* 1 dash hot pepper sauce
* 1 dash Worcestershire sauce
* 4 hamburger buns
* 1 tomato, sliced
* 4 leaves of lettuce (optional)

Directions

1. Combine tuna, egg, bread crumbs, onion, celery, red bell pepper, mayonnaise, hot chili sauce, chili sauce, dill, salt, pepper, hot pepper sauce and Worcestershire sauce. Mix well. Shape into 4 patties (mixture will be very soft and delicate). Refrigerate for 30 minutes to make the patties easier to handle, if desired.
2. Coat a non-stick skillet with cooking spray; fry tuna patties for about 3 to 4 minutes per side, or until cooked through. These are fragile, so be careful when turning them.
3. Serve on buns with tomato slices and lettuce leaves, if desired.

MINI QUICHES

Ingredients

* 6 slices bacon, chopped
* 1 onion, chopped
* 3 eggs
* 1/2 cup buttermilk baking mix
* 1 1/2 tablespoons chopped fresh parsley
* 1 cup shredded American cheese

Directions

1. Preheat the oven to 350 degrees F (175 degrees C). Grease 2 mini muffin pans. In a large skillet over medium heat, fry bacon and onion together for about 5 minutes, or until bacon is crisp. Drain and set aside.

2. In a medium bowl, beat the eggs. Stir in the baking mix, parsley, shredded cheese, bacon and onion. Spoon into greased muffin cups.

3. Bake for 10 to 15 minutes in the preheated oven, or until the tops are lightly browned. Allow mini quiches to cool in the pan before carefully removing with a small knife or spatula.

NOTE–you can modify this one, too: using 5 eggs and just 2/3 cup of Bisquick…changing cheese to cheddar.

Can make other variation: spinach, artichoke and swiss/mozzarella cheese mix (very tasty);

Question: What are some simple recipes using avocados as a main ingredient?
My doctor said I needed to gain weight. My friends on Y/A said avocados are a vegatable that is high in calories.

I have never cooked with them. So I don’t know much about them. Like how do you know when they are ripe. How long do they keep for. Any web sites would be great, that are about avocados and recipes would be great.

Oh, and also if your recipes could be for 1-2 servings, I live alone, and I hate wasting stuff.

Question: What are the laws regarding using other peoples recipes?
I have so many recipes that I’ve gotten off the web and the other day I thought wouldn’t it be a great idea to open a little restaurant using these recipes and continuing to add to them. Would it be possible to do so? Would I need to give credit to where the recipe came from or change it a bit, which I usually do anyway? Would I need to get permission if I were to use the exact recipe? I was just pondering an idea so if anyone knows or knows where I could get information I would appreciate it.

You could use them but cannot claim that they are your recipes nor can you capitalize on them by putting them in a cookbook.

Question: How does cooking custard for homemade ice cream compare to using raw eggs?
It seems that cooking custard is primarily to reduce the risk of salmonella, but does the taste or texture change? How does cooking affect the chemistry?

Making it a custard will make the ice cream creamier and a smoother taste. Using raw eggs will just add to the richness.

Question: How many recipes using an unusual “secret” ingredient do you have?
I have lots of recipes, but my fudge recipe and oatmeal raisin cookie recipe both have unusual ingredients. Both make a very, very good tasting dessert, everyone wants the recipe and both desserts get eaten in very short order, but no one can guess what the “secret” ingredient is.

P.S. My fudge recipe calls for Velveeta. My cookie recipe uses Miracle Whip.
I’m not so sure what the “secret” ingredient is in haggis. Did you even read the question?

I put vanilla extract in everything. I don’t know why. I don’t know if it makes it taste any better. I just like vanilla.
