    INGREDIENTS:

    8 Chicken Joints
Egg, Breadcrumbs and Plain Flour for coating the Chicken
    Corn Oil

    For the garnish:
    Fried Bananas
    Corn Fritters

    METHOD:

Coat the Chicken with seasoned Flour, then egg and finally Breadcrumbs. Put into the refrigerator for 1 hours to set the coating. Heat a deep fat fryer (360F / 180C) and carefully lower in the Chicken portions (if necessary in two batches). Cook for about 20 – 30 minutes until no juices run out when pierced. To make the Corn Fritters, take a small bag of frozen Sweetcorn, separate 2 Eggs and beat the Yolks into the Sweetcorn. Whip up the Egg Whites and fold into the Sweetcorn mixture. Then stir in enough Plain flour to make a stiff mixture. Shape into little pats and fry in oil until brown.

To make the Banana Fritters, cut the bananas in half lengthwise and fry until golden. Serves 8.

Don’t know about the french cuisine though.
